Mediterranean Garlic Salad Recipe

INGREDIENTS FOR VINAIGRETTE:
  • 1 cup of white balsamic vinegar
  • 1 tablespoon of Dijon mustard
  • 1 package of Uncle Dan's Mediterranean Garlic Seasoning
  • 2½ cups of olive oil
INGREDIENTS FOR SALAD:
  • 2-3 sliced cucumbers
  • 4 roma tomatoes, wedged
  • 2 Walla Walla sweet onions, julienned
  • 1 tablespoon of garlic
  • Black pepper
  • Feta cheese
INSTRUCTIONS FOR VINAIGRETTE:
  1. Whisk the vinaigrette ingredients together, save for the olive. Slowly mix in the olive oil while whisking.
INSTRUCTIONS FOR SALAD:
  1. Mix salad ingredients together in a large bowl.
  2. Add in half the vinaigrette with a dash of black pepper.
  3. Top with feta cheese.

BBQ Baby Back Ribs Recipe

INGREDIENTS:
  • 3 pounds of baby back ribs
INGREDIENTS FOR RUB:
  • 1½ cups of brown sugar
  • 1 cup of salt
  • 1 teaspoon of crushed red pepper
  • ¼ cup of cumin
  • 2 teaspoons of black pepper
INGREDIENTS FOR BBQ SAUCE:
  • 1 package of Uncle Dan's® Chipotle Ranch Seasoning
  • 1½ cups of brown sugar
  • 1 cup of water
  • 1 cup of molasses
  • 2 cups of ketchup
  • 2 chipotle peppers
INSTRUCTIONS:
  1. Mix rub ingredients and rub ribs both sides. For best results, rub 2-3 days.
  2. Then barbecue on grill for approximately 2 hours on low heat.
  3. For sauce, mix brown sugar and water into sauce pan.
  4. Add chipotle peppers and Uncle Dan's® Chipotle Ranch Seasoning and Salad Dressing.
  5. Bring to a rolling boil for 3 minutes, and break up the peppers.
  6. Add ketchup and molasses and let boil again.
  7. As ribs finish, spread on sauce and let cook for 20-30 minutes on one side, then flip and spread on the other side.

Italian Chicken Milano Recipe

INGREDIENTS FOR CHICKEN MILANO:
  • Chicken Breasts
  • Uncle Dan's Mediterranean Garlic
  • Olive Oil
  • Fresh Rosemary Chopped Fine
INGREDIENTS FOR MILANO SALAD:
  • Fresh Arugula
  • Extra virgin Olive oil and Fresh Lemon
  • Chopped Artichoke hearts
  • Diced Roasted Red Peppers
  • Capers rinsed
  • Calamato Olives rinsed and diced
  • Diced tomatoes outside flesh only
INSTRUCTIONS FOR CHICKEN MILANO:
  1. Marinate chicken with olive oil and rosemary
  2. Place chicken on BBQ and season with Mediterranean Garlic, turn over and season other side.
INSTRUCTIONS FOR MILANO SALAD:
  1. Place arugula on plate and drizzle on extra virgin olive oil and squeezed lemon, add all others as a garnish, then add grilled chicken breasts.

INGREDIENTS FOR CROSTINI:
  • ¼ cup of butter
  • ½ cup of olive oil
  • 2 teaspoons of Uncle Dan's Original Southern Classic Ranch Seasoning
INGREDIENTS FOR WHIPPED GORGONZOLA & BALSAMIC FIG-WHIPPED GOAT CHEESE & SUN-DRIED TOMATO BASIL:
  • ¼ pound of soft butter
  • ½ pound of gorgonzola or Goat cheese
  • 3 tablespoons of sour cream
  • 2 ½ teaspoons Uncle Dan's Blue Cheese Seasoning
INGREDIENTS FOR FIG PUREE:
  • Dried figs sliced in half
  • ½ cups port wine
  • ½ cup of Balsamic vinegar
INGREDIENTS FOR SUN-DRIED TOMATO BASIL:
  • Sun-dried Tomato reconstituted for 5 to 10 minutes, drained and towel dried
  • Fresh basil
  • Olive Oil
  • Pinch Salt and Pepper
INGREDIENTS FOR JALAPEÑO CREAM CHEESE & SMOKED SALMON:
  • Smoked Salmon
  • Jalapeño Cream Cheese
  • 6 ounces of cream cheese
  • 1 teaspoon of Shallots
  • 2 teaspoons of Capers
  • Zest of Lemon, orange and 2 ounces of the juices
  • 2 teaspoons of Uncle Dan's Italian Seasoning
  • 2 ounces of fresh cilantro chopped
  • 1 jalapeno finely minced
INSTRUCTIONS:
  1. Heat till butter is melted and brush on pan.
  2. Lay down slices and pat with brush Bake at 400 degrees for 12 to 18 minutes
  3. Shake on garlic powder (not granulated)

Grilled Mexican Corn Salad Recipe

Ingredients
  • Corn on the cob
  • Cilantro
  • Olive Oil
  • Uncle Dan's® Chipotle Ranch Seasoning
  • Salt
  • Uncle Dan's® Country Dill Seasoning
  • Tomatillos
  • 2 Avocados
  • 1 C Creme Mexicana (sour cream)
  • 1 Lime
  • 1/2 C water
  • Yellow cherry tomatoes, halved
  • Queso Fresco
  • Lard
Instructions
  1. Put the corn in a bowl and hand mix in olive oil, cilantro and Uncle Dan's® Chipotle Ranch Seasoning.
  2. Grill the corn until done.
  3. Cut the corn from the cob.
  4. Pan fry tomatillos seasoned with Uncle Dan's® Country Dill in lard until caramelized. Let cool.
  5. Puree tomatillos, two avocados and Creme Mexicana, water, and squeezed lime juice.
  6. In a bowl, mix the corn with halved cherry tomatoes.
  7. Add Uncle Dan's® Chipotle Ranch and salt to taste. Crumble in Queso Fresco and cilantro.
  8. Finally, mix in tomatillo puree mix.

Chipotle Bacon Chocolate Ice Cream

INGREDIENTS:
  • 1 package of Uncle Dan's Chipotle Seasoning
  • 2 cup of heavy whipping cream
  • 2 cups of half and half
  • ¾ cups of granulated sugar
  • 1 tablespoon of vanilla extract
  • ¼ cup dark chocolate chips
  • 4 pieces sliced bacon, cooked fairly crisp, drained well and minced
INSTRUCTIONS:
  1. In a large bowl combine cream and half & half. gradually whisk in sugar and vanilla until well mixed.
  2. Refrigerate until well chilled (at least 3 hours).
  3. Toss bacon pieces with Uncle Dan's Chipotle Mix while bacon is still warm then spread over a flat surface.
  4. Melt chocolate in double boiler and drizzle over bacon mixture.
  5. Place cream mixture into ice cream machine, add bacon mixture half way through.
