Bleu Cheese Cheesecake with Walnut Crust and Blueberry Compote

Ingredients

  • 3 pounds of cream cheese
  • 3 cups of sour cream
  • 2 cups of sugar
  • 1 cup of lemon juice
  • 3-5 cups of eggs
  • 1 package of Uncle Dan's Bleu Cheese Seasoning and Salad Dressing
  • 1 1/2 cups of ground walnuts
  • 1/4 cup of sugar
  • 4 tablespoons of butter
  • 2 cups of blueberries
  • 1/2 cup of sugar
  • 1/2 cup of port wine

Instructions

  1. Preheat your oven to 300 degrees.
  2. Begin with the crust. Mix together ground walnuts, sugar, and butter until well combined. Press the crust mixture into the bottom of a springform pan and bake for 10 minutes.
  3. While the crust is baking, soften cream cheese until smooth. Then add sugar, sour cream, and Uncle Dan's Bleu Cheese. Mix until well combined.
  4. Reduce mixer speed and slowly add in eggs, ensuring they are fully incorporated.
  5. Pour the cheese mixture into the pre-baked crust in the springform pan.
  6. Bake the cheesecake in the preheated oven for about 1 hour to 1 hour 15 minutes
  7. While the cheesecake is baking, prepare the blueberry compote. Combine blueberries, sugar, and port wine in a saucepan over medium heat. Simmer until the blueberries burst and the mixture thickens, stirring occasionally.
  8. Allow the cheesecake to cool completely before topping with the blueberry compote.
  9. Serve and enjoy!
