California Country Dill Macaroni Salad


  • 2 cups cooked macaroni
  • 1 cup diced cucumber
  • 1 cup diced red bell pepper
  • 1/2 cup diced red onion
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1/2 cup mayonnaise
  • 1-2 tablespoons Uncle Dan's California Country Dill dressing (use what tastes good)
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste


  1. Cook the macaroni according to package instructions until al dente. Drain and rinse under cold water to cool it down.
  2. In a large bowl, combine the cooked macaroni, diced cucumber, diced red bell pepper, diced red onion, sliced black olives, chopped fresh dill, and chopped fresh parsley. Toss to mix the ingredients evenly.
  3. In a separate small bowl, whisk together the mayonnaise, Uncle Dan's California Country Dill dressing, Dijon mustard, salt, and pepper until well combined.
  4. Pour the dressing mixture over the macaroni salad and toss until all the ingredients are coated in the dressing.
  5. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
  6. Before serving, give the macaroni salad a quick toss and adjust the seasoning if needed.
