Light, zesty, and packed with flavor, this Lemon Herb Shrimp Pasta Salad is the perfect summer dish. Featuring Uncle Dan’s Trophy Spice – Seafood & Pasta Blend, it’s a refreshing mix of tender shrimp, pasta, and vibrant herbs with a citrusy kick. Great as a side dish or a light meal for your next BBQ or picnic.

Ingredients
- 12 oz rotini or bowtie pasta
- 1 lb cooked shrimp (peeled and deveined)
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 tsp lemon zest
- 1 tbsp Uncle Dan’s Trophy Spice – Seafood & Pasta Blend
- 1 cup cherry tomatoes, halved
- 1/2 cup diced cucumber
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- Salt & pepper to taste
Instructions
- Cook pasta according to package instructions. Drain, rinse with cold water, and set aside.
- In a large bowl, combine olive oil, lemon juice, lemon zest, and Trophy Spice – Seafood & Pasta Blend.
- Add shrimp to the bowl and toss until evenly coated.
- Add cooled pasta, tomatoes, cucumber, red onion, and parsley. Toss gently to combine.
- Taste and adjust with salt, pepper, or more lemon juice as needed.
- Refrigerate for at least 30 minutes before serving for best flavor.
