Marinated Steak Salad Recipe

  • 3 large red potatoes, peeled and cubed
  • 3 cups thinly sliced medium rare beef steak
  • 1/3 cup diced red bell pepper
  • 1/3 cup diced yellow bell pepper
  • 1/3 cup chopped red onion
  • 1 scallion top, thinly sliced
  • 2/3 cup Uncle Dan’s® Mediterranean Garlic dressing
  • 1/3 cup chopped fresh parsley
  • 16 ounces mixed lettuce
  • Zest of 1 orange
  • Dressing
  • 1-1/3 cups salad oil
  • 1/2 cup vinegar
  • 2 tsp. sugar
  • 1/4 tsp. garlic powder

  1. Cook the potatoes in boiling salted water to cover in a saucepan until tender: drain.
  2. Combine the potatoes, steak, bell peppers, onion and scallion in a large bowl. Pour the dressing over the steak mixture and toss gently to combine.
  3. Add the parsley and toss gently to combine.
  4. Arrange the lettuce leaves on 4 plates. Spoon the steak mixture over the lettuce. Garnish with orange zest. Serve at room temperature.
  1. Combine ingredients and mix well with wire whip. Let stand for 20 minutes. Pour over salad and mix well.
  2. To improve flavor chill for 24 hours before serving. Mix 2 or 3 times during refrigeration
