Marinated Steak Salad Recipe

Ingredients
- 3 large red potatoes, peeled and cubed
- 3 cups thinly sliced medium rare beef steak
- 1/3 cup diced red bell pepper
- 1/3 cup diced yellow bell pepper
- 1/3 cup chopped red onion
- 1 scallion top, thinly sliced
- 2/3 cup Uncle Dan’s® Mediterranean Garlic dressing
- 1/3 cup chopped fresh parsley
- 16 ounces mixed lettuce
- Zest of 1 orange
- Dressing
- 1-1/3 cups salad oil
- 1/2 cup vinegar
- 2 tsp. sugar
- 1/4 tsp. garlic powder
Instructions
Salad
- Cook the potatoes in boiling salted water to cover in a saucepan until tender: drain.
- Combine the potatoes, steak, bell peppers, onion and scallion in a large bowl. Pour the dressing over the steak mixture and toss gently to combine.
- Add the parsley and toss gently to combine.
- Arrange the lettuce leaves on 4 plates. Spoon the steak mixture over the lettuce. Garnish with orange zest. Serve at room temperature.
Dressing
- Combine ingredients and mix well with wire whip. Let stand for 20 minutes. Pour over salad and mix well.
- To improve flavor chill for 24 hours before serving. Mix 2 or 3 times during refrigeration
