Mediterranean Chicken Pita Sandwich with Uncle Dan's Garlic Dip

This sandwich offers a perfect combination of creamy, tangy, and fresh flavors. Plus, with the protein from the chicken and Greek yogurt, and the fiber from the whole wheat pita and vegetables, it's a meal that will keep your kids full and focused throughout their school day.

Ingredients:
- 2 boneless, skinless chicken breasts
- 1 packet of Uncle Dan's Mediterranean Garlic seasoning mix (use what tastes good)
- 1 cup of Greek yogurt (for the dip)
- 1 tablespoon of olive oil
- 1 large cucumber, finely chopped
- 2 tomatoes, sliced
- 1 small red onion, thinly sliced
- 1 cup of lettuce, shredded
- 4 whole wheat pitas
- 1/2 cup of feta cheese, crumbled
Instructions:
- To prepare the dip, mix one packet of Uncle Dan's Mediterranean Garlic seasoning mix with 1 cup of Greek yogurt in a bowl until well combined. Cover and refrigerate for at least 1 hour to let the flavors meld together.
- Meanwhile, season the chicken breasts on both sides with salt and pepper. In a skillet over medium heat, add the olive oil. When the oil is hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until the chicken is cooked through and no longer pink in the middle. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
- To assemble the sandwiches, spread a generous amount of the prepared Uncle Dan's Mediterranean Garlic Dip on each pita.
- On one side of the pita, layer the sliced chicken, cucumber, tomatoes, red onion, and lettuce.
- Sprinkle with feta cheese, then fold the pita in half like a sandwich.
- Repeat the assembly process with the remaining pitas.
- Serve the Mediterranean Chicken Pita Sandwiches immediately for a delicious, healthy, and flavor-packed lunch.
