Rack of Lamb with Mashed Potatoes Recipe

Afternoon with Uncle Dan features guest chefs cooking with the real Uncle Dan from Uncle Dan's® Seasoning and Salad Dressing. This video features Chef Dana Collins from The Boathouse on Hayden Lake in Idaho.


Ingredients
  • 1 pkg. Uncle Dan's® Mediterranean Garlic Seasoning and Salad Dressing
  • 1 pkg. Uncle Dan's® Bleu Cheese Seasoning and Salad Dressing
  • 2 tbs dijon mustard
  • 1/4 C panko
  • Olive oil
  • Pinch of rosemary
  • Pinch of thyme
  • 1 tbs chopped fresh garlic
  • Rack of lamb
  • Potatoes
Instructions
  1. In mixing bowl, combine and stir dijon mustard, olive oil, panko, rosemary, thyme, garlic, and 1 tbs Uncle Dan's® Mediterranean Garlic Seasoning and Salad Dressing.
  2. Set out rack of lamb and let it get to room temperature.
  3. Cover the lamb in marinade.
  4. Bake in oven for 12-15, or until done, at 450°.
  5. Remove from oven, cover, and let rest for 10 minutes.
  6. Boil potatoes, mash and mix in butter and Uncle Dan's® Bleu Cheese Seasoning and Salad Dressing.
