Ingredients
- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
- 2 tbsp olive oil
- 2 tbsp Uncle Dan’s Sriracha Ranch
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1/2 tsp smoked paprika (optional)
- Wooden or metal skewers
- Optional garnish: chopped fresh parsley, lime wedges
Instructions
- In a large bowl, combine olive oil, lemon juice, Uncle Dan’s Sriracha Ranch, garlic powder, and smoked paprika. Mix well to create a marinade.
- Add the chicken cubes to the bowl and toss to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Preheat your grill to medium-high heat (about 400°F).
- Thread the marinated chicken cubes onto skewers, leaving a small gap between each piece for even cooking.
- Place the skewers on the preheated grill and cook for 12-15 minutes, turning every 3-4 minutes, until the chicken is fully cooked and reaches an internal temperature of 165°F.
- Remove the skewers from the grill and let rest for 2-3 minutes. Garnish with chopped parsley and serve with lime wedges or your favorite dipping sauce.
