These Cheesy Stuffed Baked Potatoes are the ultimate comfort food. Baking the potatoes until tender and then filling them with a creamy mixture of butter, Uncle Dan's Classic Ranch Dressing, and a blend of Cheddar and Mozzarella cheeses creates a deliciously cheesy and flavorful dish. Sprinkled with Parmesan cheese, these stuffed baked potatoes are baked to perfection, resulting in a creamy and indulgent side dish that will satisfy your cravings.

Uncle Dan's Twice Baked Potato Recipe

Ingredients

  • 4 baking potatoes
  • 1/4 cup butter
  • 1/2 cup grated Cheddar Cheese
  • 1/2 cup grated Mozzarella Cheese
  • 1 cup prepared Uncle Dan's Classic Ranch (Original Southern) Dressing
  • Parmesan Cheese (optional)
  • Bacon bits and chopped onions (optional toppings)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes clean and pat them dry with a paper towel. Prick each potato several times with a fork.
  3. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the potatoes are tender when pierced with a fork.
  4. Remove the potatoes from the oven and let them cool slightly.
  5. Slice each potato in half lengthwise. Using a spoon, carefully scoop out the insides of the potatoes, leaving about 1/4 inch of potato flesh attached to the skin. Transfer the scooped-out potato flesh to a large bowl.
  6. Add the butter and Uncle Dan's Classic Ranch Dressing to the bowl with the potato flesh. Mash and blend everything together until smooth and creamy.
  7. Stir in the grated Cheddar and Mozzarella cheeses until well combined.
  8. Spoon the mixture back into the potato shells, dividing it evenly among them.
  9. Sprinkle the stuffed potatoes with Parmesan cheese, if desired. You can also add bacon bits and chopped onions as additional toppings.
  10. Place the stuffed potatoes on a baking sheet and return them to the oven. Bake for an additional 20 minutes, or until the cheese is melted and lightly golden on top.
  11. Remove from the oven and let them cool for a few minutes before serving.
