This Whiskey-Marinated Steak with Zesty Succotash and Chipotle Polenta is an explosion of flavors and textures. - 1 cup of whiskey
- 1½ cups of oil
- 2 tablespoons of Uncle Dan's Mediterranean Garlic Seasoning
- ¾ cup of small diced red bell pepper
- ½ cup of small diced red onion
- 2 tablespoons of minced jalapeño
- 1 cup of corn
- 1 cup of lima beans
- 1½ tablespoons of Uncle Dan's Zesty Ranch Seasoning
- 3 cups of polenta
- 6 cups of water
- 1 package of Uncle Dan's Chipotle Ranch Seasoning
- 1 cup of shredded parmesan cheese
- Begin by combining whiskey, oil, and Uncle Dan's Mediterranean Garlic Seasoning in a bowl to create the marinade. Immerse your choice of steak in the marinade and let it sit for a few hours, ideally overnight.
- For the succotash, sauté the diced bell pepper, onion, and minced jalapeño in a skillet until they soften. Add the corn and lima beans, and season the mixture with Uncle Dan's Zesty Ranch Seasoning. Cook until all the ingredients are well combined and the vegetables are cooked to your liking. Set the succotash aside.
- To prepare the polenta, bring the water to a boil in a saucepan. Gradually whisk in the polenta and reduce the heat to low, stirring constantly until the polenta thickens.
